The best (and easiest!) Avocado, Cucumber & Tomato salad

Have I mentioned before that I am mildly obsessed with avocado?

It is true.
On toasted bread with a little  pepper sprinkled on top
on a garlic flatbread with veggies for dinner
or for breakfast- I am not partial to one over the other. 

And I also am a huge fan of salad. 
So I am all about any recipe
that calls for avocado and fresh veggies.

This one is simple to make.  Easy to enjoy. And delicious. And it has avocado.
So it is pretty much perfect right?
I think so.
It is a Cucumber Tomato Avocado Salad with a sprinkling of salt & pepper and feta cheese...
and it is amazing. 
And it is so simple and easy to make that 
you can make it for enjoying any day of the week
or for knocking your dinner guests socks off at your next get together.

So many of you asked me to share the recipe for this after a quick share on IG a few weeks back
and so here you go!

There are many versions of this recipe out there-
so you really can add a bit of this or take out that if you like something different.
Olives would be great in this or even some blue cheese instead of the feta
Really- up to you!

But this is how I make it:

Fresh cucumber, avocado & tomato salad

Here is what you need:

1 -2 large cucumber
4 -5 roma tomatoes
3 avocados
1/2 of a red onion
Chopped fresh cilantro
Lemon juice
Salt & pepper to taste
A dribble of olive oil 
Feta Cheese 

Start with chopping your cucumber up.
You can cube, slice, dice- whatever you prefer.
I slice- and half.

Same deal with the tomatoes.
I like them chunky- so I chunked them.

Toss the tomato, cucumber and in a bowl
and grab a handful of cilantro and chop it up and mix it in.
I am not super technical when it comes to things like cilantro- 
because that is something really that is to taste. 
I am a big fan of cilantro- so I might add more than you would like.
The recipe generally calls for about a 1/4 of a cup if that helps.
I call for a handful. Just go with what you like.

Up next- the red onion and the avocado.
Slice and chop your red onion and add to the bowl 
and then it is yummy avocado time.

A tip with choosing the avocado-
 you don't want them too mushy or they won't slice well.
And you don't want them too firm- or they are just not as delicious.

So, try to choose in between.
A slight softness when you press press your finger against them but not guacamole ready.
Yes, you have my permission to go be 'That' person in the store
who is squeezing the avocados.
;)

Cut them in half and then cut them chunky
and add to your bowl.

Fresh vegetable salad on dish

Toss with a bit of fresh squeezed lemon juice and olive oil.
(I simply slice the end off a lemon and squeeze over the veggies.)
Then sprinkle with a bit of salt and pepper to taste
and add in feta cheese in chunks or crumbled if you would like

good for you

  6. I love tomatoes, but my family doesn't. However, they do like sun-dried tomatoes and salsa from a jar (go figure!). I'm thinking to try finely chopped sun-dried tomatoes (and not a lot of it). It would provide color and flavor. They do like feta, thankfully! Or, I could maybe use finely chopped red pepper, but not too much as it can overpower the other flavors. Chopped pimento is another idea. Green olives with pimento? Or, maybe bacon instead? I think the possibilities are endless! Thank you for sharing this, Courtney!
