The other day in between that room renovation
and wrapping presents and sprinkling the house with Christmas cheer…
I baked up something sweet.
I grabbed the butter, the vanilla and chocolate kisses
and after brushing a coat of paint on the project…
I scooped, sugared, melted, mixed and blended and
then wrapped and rolled and baked to perfection.
And then drizzled a bit of creamy chocolate and took a bite.
And it was a bite full of chocolate creamy dreamy deliciousness.
This is basically a chocolate chip shortbread cookie
wrapped around an ooey gooey melted chocolate kiss.
So good.
This was a new to me recipe- and as usual, I changed a few things.
For one- swapping the walnuts for pecans- which I love and had on hand.
And also wrapping them very lightly in powdered sugar instead of drenching
and then drizzling with chocolate.
And you could add tiny chocolate chips to the dough as well if you want to be a rebel.
Here is the recipe
(adapted from 12 Tomatoes)
Chocolate Chip Shortbread Surprise Cookies
What you need:
36 Hershey’s kisses- unwrapped
1 3/4 cup flour
1 cup unsalted butter
1 cup pecans finely chopped
1/2 cup sugar
1 tsp. vanilla extract
1/4 tsp salt
powdered sugar and/or melted chocolate for drizzle
Preheat oven to 375º F
In a large bowl or mixer, cream together butter, sugar and vanilla extract
until mixed well and fluffy.
Gradually beat in flour, pecans and salt and mix well.
and then cover dough and place in refrigerator to chill.
Once dough is firm- use a tablespoon or small ice cream scoop to measure out
about 1 tablespoon of dough.
Wrap dough carefully around 1 chocolate kiss
and wrap the dough around it to cover it completely.
Transfer cookie to lined baking sheet
and repeat with remaining dough and chocolates.
Bake cookies for 12‑14 minutes
and remove from oven and let cool 5 minutes.
The original recipe calls for rolling them in powdered sugar
but you can also use a few extra kisses and create a drizzle.
Simply melt the chocolate with a little bit of shortening and drizzle over the tops of the cookies
instead of or in addition to rolling them in powdered sugar.
Since I am a fan of shortbread cookies on occasion- this recipe is one to file away for making again

Oh they look soooo tasty:) Need to try them out, but there aren't any Hershey Kisses here in Europe or just in special stores (not in my current city:/) oh well, would be nice to see more of such cookie recipes from you:)
