Ohhh the deliciousness of fresh made waffles topped with fresh berries….
I indulge in waffles or pancakes just a handful of times a year but after a couple recent recipes – I am starting to wonder why I don’t enjoy them more often.
I recently bought a very small waffle iron to be able to create a few fun recipes- and of course- those chunky waffles were on the list.
So simple and easy to make.
You can use a waffle recipe adapted from a long ago recipe- or to keep it easy- an organic pancake/waffle mix works just perfectly. For the topping- I am ALL simple- and about keeping the ingredients down to what you need with none of what you don’t.
Berry & Apple topping
2-1/2 cups fresh blackberries
2-3 fresh apples- sliced or diced to your preference of firmness when heated
1/4 cup water
1/4 cup granulated sugar or Agave nectar -your preference.
After cleaning and cutting your apples- start to simmer them just a bit in a saucepan with your water and sugar. You can also add a tad bit of butter for a more rich sauce- and if you want something thick- grab your cornstarch and add a teaspoon.
Cook over low to medium heat until a bit it starts to thicken and add your blackberries and cook a few minutes longer until they start to ‘burst’.
Set aside and let cool for a few minutes while you make your waffles or pancakes and then butter and top away. You can also add a bit of agave nectar or maple syrup if you would like a bit of extra sweetness. The apples and blackberries can be a bit on the tart side depending on what type you use- so totally your preference.
Dust with powdered sugar and enjoy! This topping is also delicious for vanilla ice cream if you are so inclined! 🙂
