Simple & Delicious Pumpkin Streusel Muffins



Simple, delicious and easy pumpkin spice muffins?
Yes, please.




Pumpkin everything is almost a fall staple I think...
Breads and treats, coffee and even roasted pumpkin seeds- 
it seems the minute the air gets a little chilly and the calendar inches closer to autumn- pumpkin comes to mind and is everywhere.
And these pumpkin streusel muffins are pretty perfect for satisfying that craving.

Though pumpkins are a bit scarce here yet- 
which can make autumn baking and decorating in September a bit harder. 
So, if you don't have baking pumpkins just yet- you can always use canned- 
which is actually what the original recipe calls for ( I have left it as is) 


This was a last minute baking project on the go the other day- so pardon the iphone photos- at least I got a couple before they started to get gobbled up.

which is perfect this busy time of year
and they have streusel topping-
 which is my favorite part




Adapted from this recipe


Ingredients

1/4 cup butter, softened
1/2 cup sugar
1/4 cup packed brown sugar
2/3 cup canned pumpkin
1/2 cup buttermilk
2 large eggs, lightly beaten
1 teaspoon grated orange zest
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 to 1 teaspoon pumpkin pie spice
1/4 teaspoon salt


Streusel Spice Topping

1/3 cup all-purpose flour
1/4 cups oats
3 tablespoons brown sugar
2 tablespoons cold butter


In a large bowl, blend butter and sugars until light and fluffy.
Mix the pumpkin, buttermilk, eggs & orange zest.
Combine the flour, baking soda, baking powder, pumpkin pie spice and salt and then start to add to pumpkin mixture just until blended and then fill the muffin cups two-thirds full.

Make your topping by combining flour and brown sugar- and then cut your butter in until mixture is crumbly. Sprinkle over each cupcake batter- and then bake at 375° for 20-25 minutes or until fork comes out clean.


Enjoy warm with a bit of butter or honey or cool and enjoy when you need a little pumpkin fix.
