Rustic bread with cheese and pistachios? Yes, please! I am a huge fan of rustic whole wheat breads with delicious toppings. And I recently rediscovered my love of fresh loaves of bread with all kinds of nutty grains and flavors- and they have kind of become an obsession.
Rustic Bread
I have a confession. I was eating my avocado toast with keto bread for awhile. And while some of the keto breads taste okay- others kind of resemble cardboard. (sorry keto fans). I was merely trying to cut back a few carbs- but also found that along with the missing carbs- I was missing enthusiasm for my favorite toasts and sandwiches. And so, I decided to get over the carb count and go back to enjoying those delicious hearty breads.
And one of the ways we have been enjoying is by making different kinds of warmed or toasted bread with dinner. And the best thing about this one? It can be made in 5 minutes.
This recipe was also inspired by fresh pistachios- I kept them whole for even more crunch because there is just something about crunchy nuts on bread that makes it even better.
Here is a closer look at this delicious bread topped with a layer of creamy cheese and a sprinkle of pistachios and a drizzle of honey if desired.
Ingredients
- 1 Loaf Fresh Hearty Whole Grain Bread This is an olive bread- but you can use your favorite kind
- 1 wheel Boursin Cheese – Fig & Balsamic You can also use Garlic & Herb or any flavor you prefer
- 1 cup Pistachios – whole
Instructions
- Slice chunky pieces of bread for the toast.Warm on the stove top or in the oven.Spread a layer of Boursin cheese on the top of one side of the bread. Chop the pistachios if desired. Sprinkle with pistachios and drizzle with honey before serving.
The key to this is using a delicious fresh hearty whole grain bread. Any type will work- I used a fresh mediterranean olive bread but you could use whatever your favorite is. The Boursin Cheese is a Gournay cheese that is soft. It is similar to a cream cheese – and is flavored. I love the Fig & Balsamic for breads but again- use your favorite flavor.
These pistachios arrived whole-and after sampling a few right out of the bag- I decided not to chop them up and leave them in a chunky form for even more oomph. Of course, you can chop them if you prefer. Simple sprinkle whole or chopped on the bread and then drizzle with a bit of honey for a little extra sweetness if you would like.
Another way to Enjoy
Can you believe that we had a couple leftover pieces of this bread? We did and so my husband decided to use a piece covered in pistachios as the bread for his open faced sandwich. I didn’t try it- but he said it was pretty darn good topped with tomato & lettuce too.

This looks delicious! May i ask how you get protein? I know some people said they were diabetic now because of not enough protein. One lady did keto diet and now she’s diabetic???

Hi Nancy,
We eat a lot of different beans, quinoa, chia seeds, etc. & I have a vegan shake with pea protein for breakfast every morning. There are also quite a few replacement products if you like those- just look for one that is healthier rather than one that is more made for people who eat meat (if that makes sense) they are highly processed. I am not sure about the keto diet and diabetes – but I am not really a fan of the keto diet truth be told. Being vegetarian- much of what we eat would have too many carbs for the keto diet and there are too many things I would have to cut out that I feel are healthy foods. I was just cutting some carbs out by trying the Keto bread- but as you can see- not a huge fan of that either. haha.
