Pumpkin Waffles

Ingredients
  

  • 1 3/4 cups all purpose flower
  • 1 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp brown sugar
  • 1 cup fresh or canned pumpkin puree (not pumpkin pie mix)
  • 2 Egg Replacement product equivalent to 2 eggs (or 2 eggs)
  • 1/4 cup butter softened
  • 1 cup almond milk (or buttermilk)
  • 1/2 cup butter softened- Reserved
  • 1/2 tsp pumpkin pie spice -Reserved

Instructions
 

  • Preheat waffle iron. Oil top and bottom of iron to prevent sticking.
  • Combine flour, pumpkin pie spice, brown sugar, baking soda and baking powder and mix.
  • In separate bowl, mix together the eggs, pumpkin, almond milk and 1/4 cup of the butter. Blend with the dry ingredients and mix well.
  • Make your waffles on the iron and top with pumpkin spiced butter (recipe below)

Pumpkin Spice Butter

  • Mix 1/2 cup of softened butter with 1/2 tsp pumpkin pie spice. Whip together until mixed and spread on top of waffles. Feel free to add more spice to taste.
