I am such a fresh fruit kind of girl.
Strawberries, blueberries, kiwi, oranges, mango, etc.
Whether enjoying fruit as is
adding berries to oatmeal
adding berries to oatmeal
or making a favorite spinach salad with feta & strawberries
I love it.
Strawberries are plentiful at the market right now
which gets me a little bit excited about Summer coming
and those warm days and evenings outside entertaining and relaxing.
So while I was photographing these delicious berries and getting hungry 😉
they got me thinking about a favorite treat that
we like to make during the warm Summer months

a Fruit Tart
A few years ago, I learned a simple secret to making the crust for fruit tarts
which is to use a sugar cookie dough
I love the traditional crust- but if you are in a hurry for a last minute treat
the sugar cookie dough makes it even easier
You can roll the dough out to make a large tart or – make it simple
and make them small, cookie sized treats
They have just a few ingredients and you can use whatever fruit is
your favorite too.
Sugar cookie dough (pre made or make your own)
Cream cheese
*vanilla extract
*sugar
strawberries, blueberries, tangerine, kiwi, raspberry, peaches, etc.
Make the cookies (either your own recipe or use pre-made dough)
and while they are baking- prepare the cream cheese topping
by softening the cream cheese and stirring it a bit.
*If you like a little more sweetness- you can add just a tiny bit of vanilla
and a sprinkling of sugar to the cream cheese*
I leave it plain- but that is just my preference
I find with the sugar cookie crust there is already enough sweetness to it.
After the cookies cool
top them with the cream cheese – spreading it as thick as you would like
then add your fruit and enjoy!
These are super easy to make especially when you have a house full of your kids friends over
Plus- if you have younger kids that like to decorate their very own treat
these are great for birthday parties, etc.

Sounds great! Personally I prefer to use Italian cream cheese (mascarpone) and confectioners sugar.
