Pumpkin Waffles

Ingredients
  

  • 1 3/4 cups all purpose flower
  • 1 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp brown sugar
  • 1 cup fresh or canned pumpkin puree (not pumpkin pie mix)
  • 2 Egg Replacement product equivalent to 2 eggs (or 2 eggs)
  • 1/4 cup butter softened
  • 1 cup almond milk (or buttermilk)
  • 1/2 cup butter softened- Reserved
  • 1/2 tsp pumpkin pie spice -Reserved

Method
 

  1. Preheat waffle iron. Oil top and bottom of iron to prevent sticking.
  2. Combine flour, pumpkin pie spice, brown sugar, baking soda and baking powder and mix.
  3. In separate bowl, mix together the eggs, pumpkin, almond milk and 1/4 cup of the butter. Blend with the dry ingredients and mix well.
  4. Make your waffles on the iron and top with pumpkin spiced butter (recipe below)
Pumpkin Spice Butter
  1. Mix 1/2 cup of softened butter with 1/2 tsp pumpkin pie spice. Whip together until mixed and spread on top of waffles. Feel free to add more spice to taste.
