Autumn brings colorful leaves, crisp evenings and a whole lot of pumpkin goodness. And when it comes to breakfast- pumpkin on repeat is just about right. Today it is all about recipes- and I am sharing a simple recipe for pumpkin waffles with spiced butter to warm up your autumn mornings.
Pumpkin on Repeat
If you are of those folks who loves pumpkin and thinks the more the merrier- pumpkin waffles topped with pumpkin butter is a good thing. The best part about this recipe- it is so easy to make.
You can make the waffles from scratch, add pumpkin to your usual mix- or even just grab one of those ready to go pumpkin waffle mixes. And the key is the butter. Filled with delicious spices and so much yum- it just tops the waffles (or pumpkins or bread) perfectly.
I love to stack them up, top them with a bit of whipped pumpkin spice butter and then drizzle in maple syrup. Seriously- a tad bit of overload but so delicious.
Pumpkin Waffles & Spiced Butter
Whether you are a premade mix or a make from scratch kind- adding pumpkin and some spice takes those regular waffles to a new level.
Pumpkin Waffles
Ingredients
- 1 3/4 cups all purpose flower
- 1 tsp pumpkin pie spice
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp brown sugar
- 1 cup fresh or canned pumpkin puree (not pumpkin pie mix)
- 2 Egg Replacement product equivalent to 2 eggs (or 2 eggs)
- 1/4 cup butter softened
- 1 cup almond milk (or buttermilk)
- 1/2 cup butter softened- Reserved
- 1/2 tsp pumpkin pie spice -Reserved
Instructions
- Preheat waffle iron. Oil top and bottom of iron to prevent sticking.
- Combine flour, pumpkin pie spice, brown sugar, baking soda and baking powder and mix.
- In separate bowl, mix together the eggs, pumpkin, almond milk and 1/4 cup of the butter. Blend with the dry ingredients and mix well.
- Make your waffles on the iron and top with pumpkin spiced butter (recipe below)
Pumpkin Spice Butter
- Mix 1/2 cup of softened butter with 1/2 tsp pumpkin pie spice. Whip together until mixed and spread on top of waffles. Feel free to add more spice to taste.
This recipe is one that is adapted from an older recipe to use vegan options like almond milk, egg replacement and veggie based butter- but you can of course use milk based products and eggs. It is also easy to simply add pumpkin to a pre-made waffle mix- just reduce the amount of water you add to the mix.
Something else to remember when adding pumpkin is that it does take the waffles a little longer to crisp up while cooking since their moisture content is higher.

I’m going to try this using Aunt Jemima (Now Pearl Milling Co) buttermilk Pancake mix and add canned pumpkin & a little soda water to create extra fluff….. Substituting Soda water for the standard water has produced the lightest fluffiest pancakes possible.

I used a regular Belgian waffle maker- they make chunkier waffles than a usual waffle maker.

Hi CourTney! Love your name… Gave it to my daughter 40 years ago. 🙂 Your waffles do not have the usual lines (top to bottom, and side to side center Lines)! Please share the brand of your waffle maker… I do not like the lines, and I cannot find any waffle maker on the market at any price that that does not have the lines. Thank you in advance!

Hi Lina! Oh it is just a regular old Belgian waffle maker- I think it is probably because I don’t fill the waffle squares fully- so they don’t spread out to the ‘lines’ 🙂
