Pumpkin Spice Coffee Caramel Cobbler

  • 1 cup Flour
  • 2 tsp Baking Powder
  • 3/4 cup Natural sugar
  • 1 tsp Cinnamon
  • 1 tsp Pumpkin Pie Spice
  • 1/2 cup Pumpkin Puree
  • 1/4 cup Almond Milk
  • 1/4 cup Olive Oil
  • 1 1/2 tsp Vanilla Extract


  • 1/2 cup Natural sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Rough chopped walnuts or Pecans
  • 1 1/2 cup Coffee (or Hot water if you prefer)
  • 1/2 cup chocolate chips


  • Preheat your oven to 350 degrees
    Stir together the flour, baking powder, sugar and spices and set aside.
    In a separate bowl, mix together the pumpkin, milk, oil and vanilla & then mix into the dry ingredients. Pour into a smaller size casserole dish- unless doubling the recipe.
    Mix the sugar, brown sugar , chocolate chips and nuts together to create a crumble topping and sprinkle it on the top of the batter. Pour hot coffee (or water) over the top of the batter to cover it and bake for about 50 minutes until set.
    Cool 5-10 minutes before serving- best served warm and drizzled with extra 'caramel'.
