Pumpkin Spice Cobbler with chocolate crumble topping, warm gooey pumpkin coffee caramel and a scoop of melting vanilla bean ice cream?

This is such a delicious pumpkiny goodness treat. I made this for my husband this weekend – and he pretty much can’t get enough.
The best part? It is SO EASY to make.
I am obsessed with all things pumpkin right now. And so are my friends- as you can see todays treats are all about pumpkin recipes and our favorites.
This recipe is one found a couple of years ago- I have changed a few ingredients and also added some of what we love (chocolate & coffee!) but you can find the original here.
Ingredients
- 1 cup Flour
- 2 tsp Baking Powder
- 3/4 cup Natural sugar
- 1 tsp Cinnamon
- 1 tsp Pumpkin Pie Spice
- 1/2 cup Pumpkin Puree
- 1/4 cup Almond Milk
- 1/4 cup Olive Oil
- 1 1/2 tsp Vanilla Extract
Topping
- 1/2 cup Natural sugar
- 1/2 cup Brown Sugar
- 1/2 cup Rough chopped walnuts or Pecans
- 1 1/2 cup Coffee (or Hot water if you prefer)
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350 degreesStir together the flour, baking powder, sugar and spices and set aside.In a separate bowl, mix together the pumpkin, milk, oil and vanilla & then mix into the dry ingredients. Pour into a smaller size casserole dish- unless doubling the recipe.Mix the sugar, brown sugar , chocolate chips and nuts together to create a crumble topping and sprinkle it on the top of the batter. Pour hot coffee (or water) over the top of the batter to cover it and bake for about 50 minutes until set. Cool 5-10 minutes before serving- best served warm and drizzled with extra 'caramel'.
This is really so good served warm- and that ooey gooey pumpkin coffee caramel will be underneath when you scoop it out.
We like to scoop a little extra out and drizzle over the top with vanilla bean ice cream and chopped nuts- so good.
SO good when the ice cream melts! And a favorite thing – if you like coffee- is to use hot coffee fully in place of water -or for part of the hot water to pour over- Yum, Yum, Yum- a pumpkin spice caramel latte in the making!

Cant wait to make! Just have one question…is it baking powder or baking soda? In the ingredients it says soda but in the instructions it say powdEr.
