Fall is just around the corner…
and that means apples, pumpkins and all things
delicious are coming up soon.
This week, even though it is 103 degrees out this way (seriously… hot hot hot)
I am thinking about delicious autumn recipes with the harvest of apples, pears and peaches from our
trees as well as the local farm where we stop and buy fresh fruit.
And today- it is all about breakfast. Or dessert depending on how you look at it. 😉
And oatmeal with brown sugar and walnuts.
In a delicious baked apple.
It is a simple recipe that is so easy to make.
I found this while browsing autumn recipes and had to try it- and it was good enough to share.
Here is how you make it.
Ingredients
4 apples
1 cup rolled oats
1/4 cup brown sugar
1 teaspoon ground cinnamon
1/4 cup butter
Fresh Bluberries
chopped walnuts or pecans
Note: I omitted the butter- and just sprinkled the brown sugar
and it came out perfectly.
Not a big butter fan and wanted to keep this on the healthier side.
Directions
Preheat oven to 350 degrees F (175 degrees C).
Core each apple making a large well in the center and arrange apples on baking sheet or dish.
Mix oats, a little bit of the brown sugar (1/4 c) and cinnamon together in a bowl
Cut in butter until evenly combined.
Spoon 1/4 of the oat mixture into each apple.
Sprinkle with brown sugar and walnuts.
Bake until apples are tender and filling is bubbling
about 30 minutes.
Then top with fresh blueberries
and serve and enjoy!
Seriously delicious and sooo good.

I love baked apples and am glad to know that it tastes good without the butter!
Courtney! I noticed something very special in your photos today. Mine just arrived a couple weeks ago and is waiting for me. Mine is soft blue<3 It's lovely! Congrats to you too!
It looks delicious, but I had to chuckle when you said you left off the butter because it would be healthier. Somehow leaving off the sugar would be healthier ..but then it wouldn't taste good. Lol!
No so true!! Gaga!! Totally agree with you- We actually usually use agave nectar- but I did have some brown sugar on hand… but no butter. Lol. We just don't usually have it in the house except for baking and holidays 🙂
Sometimes the easiest and simpliest recipes are the most delicious ones!:)
Oh my I have to try this today! We eat lots of oatmeal and apples in this household! I know it makes for a great breakfast, but I also consider this dessert! How great that you have an orchard in your backyard!!
Thanks for the recipe!
Those apples looks so good. More like dessert than a breakfast dish. Add a little whipped cream on top and you have a wonderful fall dessert. I'm pinning.
That looks amazing! The recipe without the apples looks delicious too 🙂
This is the first time I have looked at your lovely blog and it is terrific! The Baked Apple Oatmeal Treat looks delicious and I plan to make it very soon! Thank you so much for sharing your delightful ideas!!! Lucy
