Sharing recipes is definitely not my norm over here
Frankly, I am much more likely to be sharing edible flowers
until AFTER I have taken photos of them
😉
But, lots of requests for more entertaining food ideas after sharing a few here and there
and so for the upcoming Summer entertaining season,
I thought I would share some of our favorite recipes
and dinner party ideas in a Weekend Entertaining series

I like easy recipes
Easy like those whip it up, put it on that perfectly scalloped white plate,
add a sprig of parsley and sprinkling of black pepper for presentation
and oh.. yeah…
it looks like you were in the kitchen for hours and hours working on it…
but really it was all of 20 minutes easy.

Clarification:
Easy & delicious
Like a fresh warm garlic flatbread filled with tons of fresh and sautéed veggies
and topped with avocado, a sprinkling of feta and fresh ground pepper.
Ohh.. it had me at garlic and fresh vegetables.
Truly though, this is a perfect easy and simple light dinner for hot summer nights.
Very little or no cooking at all depending on if you like to add some sautéed vegetables
or keep them all fresh.
This one is all veggies all.the.time.
Here’s what we like to use-
but you can use whatever your family prefers
Fresh Spinach leaves
avocado
mushrooms
cucumber
alfalfa sprouts
yellow squash
zucchini squash
tomato
red or yellow onion
red, green and yellow bell pepper
garlic
pepperoncini (if you like a little pizzazz and woswer)
Fresh whole wheat garlic flatbread
Extras:
Cheese (bleu, feta, cheddar, mozzarella, etc)
Oil & vinegar
dressing
Fresh ground black pepper
and anything else you can think of
Honestly, most of the work is in the prep work with this one
You can simply chop up your veggies for your pitas and enjoy them that way
but we like to sautée a few of them to mix in.
So the yellow squash, zucchini squash and chunks of garlic all get
sautéed while the rest stays just as they are.
Warm up your pita by placing it in a pan and flipping it once after a few minutes
you can then proceed to fill to your hearts content
Sprinkle with cubed cheese, bleu cheese or feta cheese if you would like
and a dash of fresh ground pepper
Then top with slices of fresh avocado-which, honestly, are a must for me.
I could eat them every.single.day. and not get sick of them.
You can also drizzle a little bit of balsamic vinegar and/or seasoned olive oil
or dressing if you would like.
Fold them over or leave them flat just as they are for an open faced version
These are so easy to make for a light and easy lunch or dinner with friends and kids.
Just prepare tons of extra veggies,
set them out on an extra large chop block,
let everyone fill their own flatbread as they please,
and then
sit back and enjoy!
