Sometimes you just need a little something quick and simple-
and delicious.
And that is pumpkin filled goodness.
The other day I was looking for a last minute recipe for something special for autumn.
I thought first of a fruit and cheese board- because, literally my go to for entertaining.
But I also wanted something that packed a pumpkin punch.
And I remembered a recipe I saw last year in September.
One that was all about
brie cheese
pumpkin
and caramelized walnuts.
And it was done.
That was what I was adding to the cheese board.
Seriously
the easiest (and most delicious way) to make brie
is a brie en croute.
I am obsessed.
I have shared this cranberry brie en croute recipe
and this blackberry and pecan brie en croute.
And now looking at those photos again…
I am hungry.

Seriously though- if you are a pumpkin fan-
this is your brie.
It is so easy to make
Here is the recipe originally and adapted from
Pumpkin Baked Brie en Croute
INGREDIENTS:
1 sheet frozen puff pastry, thawed
2 tablespoons pumpkin butter,
1/4 teaspoon cinnamon
1 (8-ounce) wheel brie cheese
1/2 cup pecans or walnuts halved
1 large egg, beaten
DIRECTIONS:
Preheat oven to 400 degrees F. and line a baking sheet with parchment paper.
Place puff pastry onto the prepared baking sheet
and spread pumpkin butter in the center of the pastry- and place the brie on top.
Then repeat and spread pumpkin butter evenly over the top,
leaving a 1-inch border, and sprinkle with cinnamon.
Then top with caramelized pecans or walnuts.
I used walnuts- mainly because I had very few pecans on hand
and a whole bag of delicious walnuts staring at me- but you can use either one.
Fold the puff pastry sheets over the sides of the cheese
wrapping the edges to fit around the cheese.
Brush with beaten egg
and bake.
Bake until golden brown- or about about 20-25 minutes
and then serve warm with crackers.
Or just by itself.
I am seriously obsessed.
And a tip- if you want more pumpkin spice or cinnamon flavor- simply add more.
Less- simply add less or leave off.
But don’t skimp on the size of the brie…
it is one of those things that are hard to stop nibbling on once you start.
