Cheesecake happens to be one of those things that I think I could probably enjoy
any time of the year.
But especially on special occasions- a deliciously decadent cheesecake
is the first dessert that comes to mind when planning the menu.
For several reasons really- and yes, because they are amazingly delicious is one of them.
But they are also easy to make and easy to make ahead of time
which makes them even more perfect for entertaining and indulging in.
I’m sharing 3 favorites today- pick your favorite and give it a try.
But- as always- I cannot be held responsible for the extra gym time
need for baggy sweatpants
or the difficulty in putting the fork down and stepping away from the cheesecake.
😉
Up first?
One that is practically a health food with all those fresh berries.
Fresh Blueberry Cheesecake
Ingredients:
- 1 cup graham cracker crumbs
- 3 tablespoons sugar
- 3 tablespoons margarine, melted
- 3 (8 ounce) packages of cream cheese, softened
- 3⁄4 cup white sugar
- 3 large eggs
- 1 teaspoon vanilla
- 1 1/2- 2 cups fresh blueberries
Preheat your oven to 325 degrees.
Combine graham cracker crumbs, sugar and melted margarine in a bowl
and mix until well blended and uniform.
Press mixture onto the bottom of a 9-inch springform pan- and bake for 10 minutes.
Remove crust from oven and raise oven temperature to 450F degrees.
To make your cheesecake filling:
Combine softened cream cheese and sugar in a large bowl and mix with an electric mixer at medium speed until well blended.
Add eggs, one at a time, mixing well after each addition.
Blend in the vanilla and then pour into crust.
Bake for 10 minutes at 450F, then reduce heat to 350F and bake for 25-30 minutes
or until set.
Loosen cake from rim of pan by using a knife and running it around the edges.
Cool your cheesecake before removing the rim and chill in the refrigerator.
Add several handfuls of fresh blueberries once the cheesecake is cool
and enjoy!
Peanut butter cup cheesecake
Or maybe something with a little bit of chocolate
and peanut butter is your thing?
I can tell you that it is definitely mine.
Chocolate and peanut butter are an amazing pairing any day of the week-
and in cheesecake?
Even better.
This Reese’s Peanut Butter Cup Cheesecake is insanely good.
As in INSANELY good.
You can find the recipe here.
Triple Chocolate delight
Or maybe you are more of an all.chocolate all.the.time. kind of cheesecake lover.
Well, I have you covered there too with this triple chocolate cheesecake.
And yes, it is as amazing as it sounds.
Now the hard part.
Trying to decide just which one to make for Valentines Day…
Maybe I could cut the recipes in half and make it a triple cheesecake kind of weekend.
😉
Happy weekend
