You guessed it- a Summer Spinach salad.

It’s true that I might be a little obsessed with them
Especially during Summer when the strawberries and blueberries are plentiful
A spinach salad is also perfect for entertaining and is almost always on my Summer party menu
They are easy to toss together – delicious and on the table- those colors mingling
are beautiful for presentation as well.

Probably my favorite type of spinach salad
is going to be one that is easy to throw together
and that is filled with fruit, nuts and sprinkling of crumbled cheese added
Personally- I am a big blue cheese fan.
But I do love feta mixed with strawberries and blueberries as well
Truly- it’s your preference- I don’t think you can go wrong either way.
Here’s a super simple recipe that combines some favorite ingredients:
One carton of baby spinach
2 cups of sliced strawberries
1 cup of fresh blueberries
1/2 cup candied pecans or slivered almonds
crumbled feta or blue cheese- sprinkled on top
Poppyseed or raspberry vinaigrette
either purchased or your own creation
It doesn’t get much easier than this salad to whip together.
Slice your strawberries
(I like to leave a couple large ones as well just for the top of the salad when entertaining.)
Combine your spinach, strawberries and blueberries in a bowl
and toss them a bit to mix them up.
Add your poppyseed dressing- to your taste
I like to keep it to around a capful for the whole salad- mainly because it can get a bit overwhelming
After tossing the leaves and berries again
sprinkle with crumbled feta or blue cheese
and nuts of choice
You can also add a bit of fresh ground pepper if you prefer
and I have also had this salad with thinly sliced red onion added as well-
and it is delicious
so if you are a fan of red onions- toss them in.
For the poppyseed dressing-
if you would like to make your own
here’s what you need:
1/3 cup white sugar
1/2 cup white vinegar
1 teaspoon salt
1 teaspoon grated onion
1 cup vegetable oil
1 tablespoon poppy seeds
Combine sugar, vinegar, salt and onion and stir to mix up then
slowly add the oil and then the poppy seeds.
On a side note…
did you know that something that is little and tiny with white marble and pretty gold
might have stolen my heart the other day while I was shopping?
Of course, I wasn’t shopping for something little and tiny that had marble or that was covered in gold.
but… you know how it goes.

I also find the keys to a great salad to be fruit, nuts and cheese. I'm a walnut and feta fan, although I wouldn't pass on blue cheese either. So refreshing with the berries added. Love you little table vignette. Nothing says good morning quite the same way as a lovely cup of tea ~ or coffee ~ in a sun filled room. I have a very similar vintage silver vase that I got at Alfie's market in London. Your flowers always have such a wonderful 'droop' to them that makes them look un-fussed over.
