Delicious and so easy to make-I made these Christmas cookies for Thanksgiving and they quickly became new favorites that will be on repeat. Today it is all about these chocolate chip and salted caramel delicious cookies that will have you reaching for another bite again and again.
Salted Caramel Chocolate Cookies
Yum. That is all I can say. Just Yum. Yum. Yum. And the best part? So simple and easy to make. And in a snap. Which makes these cookies all around amazing.
The coarse sea salt is a delicious addition- you can use more fine salt in a pinch- but coarse is key to that salted caramel deliciousness. We also couldn’t find the usual caramels for baking- we used Werthers soft caramels and melted them down. I did not use half and half when melting- I used water. Personal preference and it worked perfectly. I didn’t properly photograph these- honestly, I was just making them for the kids for Thanksgiving and grabbed a couple instagram snaps while setting up.

Salted Caramel Chocolate Cookies
Ingredients
- 1 roll Chocolate Cookie Dough
- 1/3 cup all purpose flour
- 24 caramels
- 1 tbsp water (or 2 tbsp 1/2 & 1/2)
- 1/3 cup semisweet chocolate chips melted
- 1 tsp coarse sea salt
- 1/2 cup chopped pecans
Instructions
- Heat oven to 350. In large bowl, break up the cookie dough and knead in the flour. Form dough into balls and roll in chopped pecans. Place on cookie sheet.
- Bake for 12-15 minutes until edges are golden brown and remove from oven. Using a spoon- press into each cookie top to create a little 'thumbprint'. Set aside and cool cookies.
- Unwrap and melt caramels with water -stirring until the caramels are melted and smooth and creamy.
- Spoon 1 tsp of caramel mixture onto each cookie and cool for 10-15 minutes.
- Melt chocolate chips and drizzle on top of each cookie and sprinkle with a bit of sea salt.
