
Simple and sweet and simply sweet for the holidays. Today it is all about cranberry recipes- and I am sharing this simple and easy to make cranberry topped holiday cake.
Cranberry topped holiday cake
You know what I love about this beautiful cake? It is just as pretty as it is delicious. Which means it makes for a lovely part of your table or treats sideboard too.
Even better- this is so easy to make. It is simply layers of white cake topped with sugared cranberries. You can use your favorite white cake and frosting recipe or order a white cake from your favorite local bakery. During the holidays and busy entertaining season, it is always good to have a contact with a local bakery that can lend a hand (or cake) if needed.
White Cake
I use a simple white cake recipe slightly adapted- you can find the original here. Once your cake is ready- a tip is to let it cool and then chill in the freezer before frosting. Otherwise, you might end up with a few crumbles of cake in your frosting. Layer your favorite white frosting in between each layer and then lightly frost the top and sides for a naked cake look.
Sugared Cranberries

Sugared cranberries are beautiful for garnish on all kinds of dishes and they are also a mix of sweet and sour.
- 2 1/2 cups granulated sugar
- 3 cups of fresh cranberries
Combine 1 cup water and 1 cup granulated sugar in a saucepan. Cook over medium heat until the sugar dissolves and the mixture comes to a simmer and then cool.
When cool, add the cranberries to the mixture to coat them and then place on a rack to dry.
Pour 1 cup of granulated sugar on a baking sheet and roll the cranberries in it to coat them completely.
Then layer on top of your cake and garnish with fresh rosemary if you would like to and voila!
